Chicken Mole Tacos with Apple Radish Slaw






Oaxaca is the home to the world's great mole sauces. Radishes are so popular in this southern Mexico state that they host a radish festival in December. The crunchy radishes do help soften the richness of the mole. Try this unusual combination and you will be happy you did.

1 tsp. vegetable oil
1/2 lbs. ground chicken
1 16 oz. jar Larry's Southwestern Mole Sauce
1/2 cup grated radish
1/2 cup grated tart apple
1 tsp. fresh lime or lemon juice
8 crunchy or soft corn tortillas 
  1. Heat the oil in a skillet over medium heat, add the ground chicken and cook until the chicken is done.
  2. Add one jar of Larry's Southwestern Mole Sauce. Heat until bubbling.
  3. Mix the grated radish and grated apple with the lime juice.
  4. Spoon the chicken mole mixture into the tacos, add a dollop of the apple radish slaw and serve.
  5. Serves 2 to 4.

Ranchero Breakfast Burritos

Breakfast burritos are popular in restaurants everywhere. With Larry's Ranchero Sauce , you can make your own all-natural breakfast burritos at home any day you want.
1 16 oz. jar Larry's Southwestern Ranchero Sauce
4 (10 inch) flour, whole wheat or gluten free tortillas
1 lb. chopped chorizo or pork breakfast sausage
4 eggs
1/4 pound grated mild cheddar cheese
  1. Warm the jar of Larry's Ranchero Sauce over medium heat.
  2. Warm the tortillas in a large skillet on low heat until soft and pliable.
  3. Brown the sausage in a skillet over medium heat until cooked through. Drain off any excess oil.
  4. Scramble the eggs.
  5. Make a breakfast burrito by laying a warm tortilla on a flat work surface. Spoon 1/4 cup Larry's Ranchero Sauce over the tortilla. Add 1/4 of the sausage, 1/4 of the scrambled eggs and 1/4 of the grated cheese on the tortilla.
  6. Fold the tortilla like an envelope and place it on a warm plate. Serve with a small dish filled with 1/4 cup Larry's Ranchero Sauce for dipping. Make the rest of the burritos and serve. 
  7. Serves four.

Chipotle Chicken and Cheese Quesadillas

Quesadillas are grilled cheese-filled tortillas that are popular in the Southwest, in Mexico, and, well, everywhere. I like mine with Monterrey Jack cheese, a portion of shredded roast chicken and a good dollop of Larry's Chipotle Sauce for that smoky flavor. 

1 16 oz. jar Larry's Southwestern Chipotle Sauce 
1 cup grated Monterrey Jack or mild cheddar cheese
2 cups shredded roast chicken
8 eight-inch wheat, whole wheat or mixed grain tortillas
2 Tblsp. vegetable oil

  1. Warm the jar of Larry's Chipotle Sauce to medium hot.
  2. Place one tortilla on your work surface and cover with 1/4 cup cheese, 1/2 cup chicken and 1/4 cup Larry's Chipotle Sauce.
  3. Cover with another tortilla and press down lightly.
  4. Warm 1/2 tablespoon oil in a 12" or larger skillet over medium heat.
  5. Place one quasadilla in the pan and cook for three minutes. Flip the quesadilla and cook until the cheese melts.
  6. Remove the quesadilla to your work surface, cut into quarters and artfully place them on a serving plate.
  7. Spoon another quarter cup of warm Larry's Chipotle Sauce into a little serving cup or on the side of the plate. Make the rest of the quesadillas the same way and serve.
  8. Dip the quesadillas  in the sauce and enjoy.
Serves 4.

Recipe for Larry's Chipotle Taco Sauce Tacos

Larry's Chipotle Taco Sauce Tacos are the natural alternative to those powdery packets of taco seasoning for making tacos at home for the whole family. Larry's Chipotle Taco Sauce is made with healthy all-natural ingredients and people like the spicy smoky flavor of chipotle.
1 teaspoon vegetable oil
1 pound lean ground turkey, beef or chicken
1 16 oz jar Larry's Chipotle Sauce
8 to 10 crunchy corn tortilla shells
1 cup finely shredded lettuce
1 cup shredded cheddar or Monterrey Jack cheese
  1. Heat the vegetable oil in a large skillet, add the ground turkey and cook through.
  2. Pour one 16 oz. jar of Larry's Chipotle Sauce over the turkey and cook for ten minutes, stirring often.
  3. Fill the tacos shells with chipotle taco turkey sauce, sprinkle on the cheese and lettuce and serve. Serves 4.

Ranchero Fish Tacos Recipe

Fish tacos are rapidly becoming one America's favorite Mexican dishes. They also make a wonderful lunch or dinner. Instead of spending your time making a sauce or salsa to go with these tasty treats, simply open a jar of Larry's Ranchero Sauce which is allows the flavor of the seafood to shine through.

One 16 oz. jar of Larry's Ranchero Sauce 
One pound of tilapia, cod, mahi mahi or other firm-fleshed fish
12 soft corn tortillas or eight flour tortillas
1 1/2 cups shredded lettuce or napa cabbage
1 lime cut into wedges for squeezing

1. Heat one jar of Larry's Ranchero Sauce in a microwave or on the stove.
2. Cut the fish into one-inch chunks and broil until just cooked through, about five to seven minutes.
3. Warm the tortillas in a dry frying pan over medium heat on the stove.
4. Fill the tortillas with fish, spoon the Larry's Ranchero Sauce over the fish and sprinkle with the lettuce or cabbage.
Serve with lime wedges and lots of napkins. Serves four.

Chipotle Grilled Pizza Barbacoa

Cooking pizza out doors on the grill adds a smoky flavor as the crust chars and gets a few grill marks from the flames.  Larry's Chipotle Sauce has a naturally smoky flavor from the chipotle peppers which are smoked jalapenos. Top with Monterrey Jack cheese, poblano peppers and onions and you have a delicious home made pizza with a Southwest blast.

1 one pound ready-to-cook package of pizza dough
1 cup Larry's Chipotle Sauce
1 cup seeded and thinly-sliced poblano pepper
1 cup peeled and thinly-sliced red onion
2 cups grated Monterrey Jack or cheddar cheese 

  1. Preheat your gas or charcoal grill to medium heat
  2. Remove the pizza dough from the package and roll it or spread it out on a cutting board to a 12 to 16 inch circle. (It doesn't have to be perfect, just so there are no torn areas in the dough).
  3. Lay the pizza dough on the grill and close the lid to the cooker. Grill for five minutes or until the down side is just firm.
  4. Flip the pizza over and top the slightly cooked side with the sauce, onions, peppers and cheese.
  5. Close the lid and cook until the cheese is melted and the bottom of the pizza is firm and slightly charred
  6. Remove from the grill , cut and serve. 
Serves four to six as a snack and two as a meal.

Tailgate parties at fall football games are right around the corner and nothing is more warming than a big pot of chili. Larry's Tailgate Chipotle Chili is is easy to make, leaving you more time to spend with your friends.
1 teaspoon vegetable oil
1/2 pound ground beef or turkey
1 15 oz. can red beans or pinto beans
1 16 oz. jar Larry's Southwestern Chipotle Sauce
1 cup shredded cheddar or Monterrey Jack cheese
  1. Pour the vegetable oil into a medium cooking pot. Add the meat and brown.
  2. Drain the beans and add them to the pot, stirring.
  3. Add the jar of Larry's Southwestern Chipotle Sauce and stir to combine. Cook over medium low heat for 20 minutes.
  4. Serve with cheese and tortilla chips. Serves 4.

Barbacoa Fish in Ranchero Sauce


Cooking fish on the backyard grill wrapped in foil is an easy, fool-proof way to serve a delicious meal with a hint of smoky barbecue flavor. I am using tilapia in this dish, but you can also use mahi mahi, cod, haddock, shark or any other firm-fleshed fish you like. Spoon a little Larry's Southwestern Ranchero Sauce over each fish fillet and you have an easy version of snapper a la Veracruz.

4 tilapia fillets, 4 to 6 oz each
1 cup Larry's Southwestern Ranchero Sauce   
4 one foot square sheets of aluminum foil
  1. Place one fish fillet in the center of each sheet of aluminum foil.  
  2. Spoon 1/4 cup Larry's Southwestern Ranchero Sauce over each fillet. 
  3. Fold the foil to cover the fish and crimp the edges to form a packet.
  4. Place the fish packets on a medium high grill (approx 400') close the lid and cook for about 10 minutes.  Open the packets just before serving and slide the fish onto the plate. 
  5. Serve with white rice and grilled zucchini on the side.  
  6. Serves four.

Chipotle Grilled Chicken Wings Barbacoa



Chipotle Grilled Chicken Wings Barbacoa is an easy recipe for chicken wings marinated in Larry's Southwestern Chipotle Sauce and cooked on the barbecue grill outside. The smoky flavor and spiciness of the chipotle sauce will make you forget Buffalo wings forever! Imagine sitting around the picnic table gnawing away at a big platter of freshly grilled chipotle chicken wings. Perfect summer!

4 pounds best quality chicken wings
1 teaspoon each salt and black pepper
1 16 oz. jar Larry's Southwestern Chipotle Sauce 


  1. Place the chicken wings in a shallow dish or baking pan. Sprinkle with the salt and pepper. 
  2. Pour the entire jar of Larry's Southwestern Chipotle Sauce over the wings and toss to coat. 
  3. Cover the wings with foil and let them marinate in the fridge for 1 to 2 hours.
  4. Heat the gas or charcoal backyard grill to high and then turn down to low. The wings will drip oil causing flares and burning if the heat is too high.   
  5. Place the wings on the grill and cook about 15 minutes or untill done the way you like them. Baste with the remaining chipotle sauce. 
Serve on a large platter with lots of napkins. 

Serves 4 to 6.
  

Mole Grilled Salmon Barbacoa

Mole Grilled Salmon Barbacoa is a recipe for salmon steaks or fillets, marinated in Larry's Southwestern Mole Sauce and cooked on the backyard barbecue grill, either charcoal or gas. The slightly oily salmon matches really well with the dark rich Mole Sauce making this your go-to fish on the grill recipe.

4 six to eight oz. salmon fillets or steaks
1 16 oz jar Larry's Southwestern Mole Sauce
1 tsp. each salt and pepper
2 tblsp. vegetable oil

  1. Place the salmon in a shallow baking dish or pan. Season with the salt and pepper.  
  2. Pour 1 cup of Larry's Southwestern Mole Sauce over the fish. Cover with foil and marinate in the refrigerator for 1 to 2 hours.
  3. Prepare your barbecue grill for medium high heat. Clean the grill and brush it with the vegetable oil.
  4. Place the salmon pieces on the grill and cook 3 to 5 minutes per side, basting with the marinade.
  5. Remove the salmon from the grill and plate. Heat the remaining mole sauce and serve on the side.
  6. Serves 4.

Larry Sombke of Delmar is on a mission to get every family in the Northeast eating Southwestern cuisine a few times a week, or as much as they dine on Italian food like our beloved pizza.
Sombke cooked up recipes for ranchero, mole and chipotle sauce years ago while working in a natural foods restaurant. Two years ago, he launched his business, aptly named Larry’s Southwestern Sauces, and has already gained more followers then you can shake a maraca at.
How has he done it? With a few well-thought-out ingredients to his business plan: First, have a great product that fits a niche market; second, talk about your product at every available venue; third, always find new ways to connect with your customers.
Sombke’s Southwestern success story begins in his childhood. Growing up in Illinois, he and his family dined on chili as a staple during mealtime. “There’s a legacy of boyhood chili influences in me,” Sombke says. “We ate it all, from medium to spicy, and the whole time I was thinking about cooking and what I could do to improve it.”
In his 20s, as a chef in Missouri, Sombke perfected his recipes, which fall under the category of enchilada sauce. “It’s not salsa; salsa is a relish used for dipping,” Sombke says. “My sauces are for cooking. These are simmer sauces. It’s gluten-free, all-natural, ethnic, artisanal and a gourmet product. I got lucky hitting all the bases of what people are looking to buy for their families right now.”
After a broad and varied career including broadcast journalism, authoring cookbooks, public relations and teaching, Sombke knew it was time to pursue his own business. He got his toes wet with a couple other businesses that ultimately didn’t survive.
“I tried a sausage business that didn’t work out,” Sombke says. “There’s always been an entrepreneurial foodie side to me.”
Today, while he still works as a substitute teacher, the rest of his time is spent brainstorming, marketing, and keeping in touch with customers via newsletters, a website with recipes and even a cooking video on YouTube.
Enthusiastic, well-spoken and upbeat, Sombke makes it difficult not to get as excited about huevos rancheros as he shows people how easy it is to prepare them. “I want to show everyone how to make a fast, delicious meal using my sauces as marinades or toppings,” Sombke says. “They work with chicken, seafood, beef, you name it. The sauces can transform anything you have in your fridge into a fantastic dinner. I hear from my customers all the time about new ways they use (the sauces) to cook.”

As barbeque season gets into full swing,Sombke says all three varieties — mole, chipotle and ranchero — make excellent basting sauces for anything you grill, right down to veggies. “Most barbeque sauces are catsup-based, but if you want catsup you can pour it out of a bottle onto your burger,” Sombke says. “Mine are hearty, flavorful grilling sauces, like what people in Colorado, Texas and California are eating.”
Larry’s Southwestern Sauces are now made and bottled at a large-scale kitchen in Rotterdam, but Sombke pays close attention to production. “You have to trust other people as your business gets larger, but also do your own quality control,” Sombke says. “You always have to be hands-on.”
Sombke is a frequent face at area farmers markets, but you can also find his sauces in 80 stores — from Price Chopper to area co-ops and natural food stores — across the Northeast and in several other states. His sauces were featured on Good Morning America as a 2012 “Super Bowl Party Essential,” another video clip you can find on his website.
One of Sombke’s talents is the ability to cook and talk animatedly at the same time. He seems destined to have become a specialty-foods business owner and a cooking teacher/coach. “Within the next 12 months my sauces will be sold in Texas and California stores,” Sombke says. “I love them, customers love them; I have a great product here. And I’m just getting started.”

Ranchero Rib Steak on the Grill




Rib steak, with or without the bone, is my favorite cut of beef steak. It is tender, it is juicy and it cooks great on the gas or charcoal grill outside. Steak is huge in the Southwest and popular in Mexico for special occasions. A good rib steak tastes even better when it is basted with Larry's Southwestern Ranchero Sauce while it is sizzling on the grill. Here's the recipe.





2 rib steaks, about 1 1/2 inches thick, about one pound each
1 tablespoon olive oil or vegetable oil
1 tablespoon chili powder
1 teaspoon each Kosher salt and fresh ground black pepper
1 16 oz. jar Larry's Southwestern Ranchero Sauce

1. Bring the steaks out of the refrigerator one hour before you plan to cook them. Bringing the steaks to room temperature helps them cook more evenly.
2. Rub the steaks with the oil and season them with the salt, pepper and chili powder. 
3. Bring your grill up to medium high heat. 
4. Pour the jar of Larry's Southwestern Ranchero Sauce into a small saucepan and bring to just below a boil. You could heat the sauce in the microwave, also.  
5. Place the steaks on the hot grill and cook for two minutes. Baste the steak with Ranchero Sauce and turn them over.
6. Baste them again with sauce and let cook for two more minutes. Turn again. 
7. Baste and turn one more time for a total cooking time of about 8 minutes for medium rare.
8. Remove the steaks from the grill, lightly cover with foil and let rest for 3 minutes.
9. Slice the steaks into one inch thick pieces, spoon more Ranchero Sauce over them and serve.
Serves 2 to 4.

Tacos al Pastor



Tacos al Pastor is the Mexican version of Greek gyros. Only it is made with pork, flavored with pineapple and served on corn tortillas. It is a very popular street food in Mexico City. Since not too many of us have a gyro spit, called a trompo in Mexico City, I've adapted it for the backyard bbq. I made a batch the other day marinating and basting the meat with Larry's Southwestern Ranchero Sauce and pineapple. Everyone in my family loved it. 


2 lbs boneless country pork ribs or tenderloin
1 teaspoon each salt and freshly ground black pepper or to taste
1 16 oz. jar Larry's Southwestern Ranchero Sauce
1 16 oz. can crushed pineapple
16 soft corn tortillas
1 cup mined onion

1. Place the pork in a large mixing bowl and sprinkle with salt and pepper.
2. Mix the Ranchero Sauce with the pineapple and pour over the meat. Cover and marinate for two hours or overnight in the refrigerator.
3. Remove the meat from the marinade and cook on a gas grill or charcoal cooker (or in a broiler) over medium high heat, basting with the marinade until the meat is cooked through, about 8 to 10 minutes.
4. Meanwhile, heat the remaining ranchero pineapple marinade until bubbling and hot for about five minutes.
5. Remove the meat from the grill, chop into small pieces and keep warm.
6. Warm the tortillas on the grill, cover and keep warm.
7. Place a spoonful of meat on each soft corn tortilla, spoon the heated ranchero pineapple sauce over that, sprinkle the minced onion over that, fold the tortillas in half and serve.
Serves 4.

Guido's Customers Love Larry's Southwestern Sauces

Chipotle Chicken Stew

Larry's Southwestern Sauces are excellent simmer sauces and chicken and chipotle seem to go together really well. This simple dish can be ready for the table in about 30 minutes. Put the rice on while you are making the chipotle chicken and they should be ready to eat at the same time.

1 1/2 lbs. boneless chicken thighs, cut into 1" chunks
salt and pepper to taste
1 Tblsp. vegetable oil
1 16 oz. jar Larry's Southwestern Chipotle Sauce
1 cup diced zucchini
3/4 cup fresh or frozen corn kernels
2 Tblsp. fresh minced cilantro

1. Season the chicken with the salt and pepper. Heat the oil in a medium sized stew pot with a lid. Brown the chicken pieces over medium heat for about three minutes.
2. Pour the jar of Larry's Chipotle Sauce over the chicken, stir, bring the mixture up to bubbly, reduce the heat to medium low, cover and simmer for 20 minutes or until the chicken is done to your liking.
3. Add the zucchini and corn to the stew, cover and simmer for another 5 minutes.
4. Serve with plain boiled rice and sprinkle with fresh cilantro.
Serves 4.

Easy Chiles Rellenos Recipe


Chiles Rellenos – These are essentially long green chili peppers stuffed with cheese, battered and fried in a little oil until browned. Serve as is or in a pool of Larry’s Southwestern Chipotle Sauce. 

Eight canned long green chili peppers
Eight chunks of Monterrey Jack or cheddar cheese, approx 1/4" by 1/4 " by two inches. 
1/2 unbleached wheat flour or fine corn flour
Four fresh eggs
1/2 cup vegetable oil
1 cup Larry's Southwestern Chipotle Sauce or your favorite chipotle enchilada sauce

1. Place the green chilies on a cutting board. Make one slit lengthwise in the side of the pepper and clean out the seeds. 
2. Place a piece of Monterrey Jack cheese into the pepper and close the pepper. 
3. Dredge the stuffed pepper in flour and set aside.
4. Separate the eggs and the yolks from four fresh eggs. Whip the whites until firm and stir the yolks until blended. Stir the yolks into the whites. 
5. Heat ½ cup vegetable soil in a large skillet until hot but not burning. (350’) Dip the dredged stuffed peppers into the egg mixture and lay them into the hot oil. Brown on one side, turn them over and brown on the other. Repeat until all the stuffed peppers are cooked.
6. Serve them as is or lay them in a pool of heated Larry’s Southwestern Chipotle Sauce.
Serves four.

Cheesy Ranchero Dip



Just in time for March Madness, the NCAA college basketball playoffs, the gym teachers at Bethlehem Middle School in Delmar, NY came up with this easy and tasty chip dip. Place 8 oz of whipped cream cheese, plain or with chives, and one 16 oz jar Larry's Southwestern Ranchero Sauce in a microwavable container. Microwave the ingredients for two minutes or until the mixture is smooth and hot. Serve with Tostitos or your favorite corn tortilla chips.  You could easily make this with Larry's Southwestern Chipotle Sauce if you wanted something smoky and a little bit spicier.

Adams Local Food Show

Great day on Saturday handing out samples of Larry's Southwestern Mole Sauce to the hundreds of people who came to Adams Local Food Show in Poughkeepsie. I mixed the Mole sauce with ground chicken so people could sample Southwestern Chicken Mole. 


I made it my mission that day to get everybody in the Hudson Valley addicted to Larry's Southwestern Mole Sauce. Everybody seemed to like it!

Southwestern Enchilada Casserole Recipe




Larry's Southwestern Enchilada Casserole is really a dish of baked enchiladas without the hassle of rolling the fillings in corn tortillas. Think of it as Mexican lasagna. This is really easy, my kids love it and I predict it will become the new favorite casserole for pot luck suppers. I've used Larry's Ranchero Sauce in this recipe, but feel free to use Larry's Chipotle Sauce or Larry's Mole Sauce instead.




1 16 oz. jar Larry's Southwestern Ranchero Sauce or your favorite enchilada sauce.
6 to 8 soft corn tortillas.
1 teaspoon vegetable oil.
1/3 lb. ground beef, chicken or turkey.
2 cups grated cheddar or Monterrey Jack cheese
1 cup shredded zucchini

1. Preheat the oven to 350'
2. Add the vegetable oil to a medium sized pot and brown the ground meat.
3. Add Larry's Southwestern Ranchero Sauce to the pot and stir it into the ground meats.
4. In a two quart baking dish, place a spoonful of warm sauce mix to the bottom.
5. Place a corn tortilla on top of that. Sprinkle with cheese and zucchini. cover with another tortilla.
6. Repeat with the layers of sauce mix, cheese, zucchini and cheese ending with sauce mix over all and topped with cheese.
7. Bake in the oven for 30 minutes or until the casserole is hot and bubbly.

Serves 4 to 6
