Chipotle Goat Cheese Enchiladas

Goat cheese, soft corn tortillas and Larry's Chipotle Sauce combined makes for some very tasty enchiladas, even for those people who are still acquiring a taste for goat cheese. The slightly smoky flavor of Larry's Chipotle Sauce really works well with this dish.

Heat one 16 oz. jar of Larry's Southwestern Chipotle Sauce. Warm 12 soft corn tortillas in the microwave for 15 seconds. Dip each tortilla in Larry's Chipotle Sauce, spread equal amounts of goat cheese on the tortillas, roll them up and place them in a baking pan.

Pour the remaining sauce over the rolled tortillas, sprinkle a cup of grated Monterrey jack on top and bake in a 350' oven for 20 minutes. Serves three to four people.

Albany Law School Chipotle Chili Recipe

Chipotle Beef Chili
Dredge one pound stewing beef in flour and brown in butter and olive oil in a medium cooking pot.

Add one 16 oz. jar of Larry's Southwestern Chipotle Sauce, one small sweet onion, chopped, one small can (16 oz.) of crushed tomatoes and simmer for two to three hours on low, stirring occasionally.

In the last hour add one 16 oz. can of dark red kidney beans.

Serve with shredded cheese and sour cream. Enjoy!

Larry's Southwestern Mexican Lasagna

Mexican Lasagna is really a dish of baked enchiladas without the hassle of rolling the fillings in corn tortillas. This is really easy, my kids love it and I predict it will become the new favorite casserole for pot luck suppers.

Spread 1/4 cup of Larry's Mole, Chipotle or Ranchero sauce in the bottom of a two quart casserole. Place one soft corn tortilla on that. Cover that with shredded roast chicken, a sprinkling of cheddar or Monterrey Jack cheese and cover that layer with another quarter cup of Larry's sauce.
Repeat with the tortillas, chicken, cheese and sauce just as if you are making lasagna.
Finish with a layer of corn tortillas, then the rest of the sauce and sprinkle cheese on top.
Bake in a 350' oven for 20 to 30 minutes until the sauce is bubbling and the cheese has melted. Let cool for a few minutes and serve. A dollop of sour cream tastes great on each serving. Serves 4.

Chipotle Nachos


Chipotle Nachos – Spread a layer of white or yellow corn tortilla chips on a microwave-ready serving plate. Spoon Larry’s Chipotle Sauce over the chips, cover with grated cheddar or Monterey jack cheese, place in the microwave for one minute or until the cheese melts. Serves two to four.

Chicken Tacos with Ranchero Sauce

Chicken Tacos with Ranchero Sauce – Shred the meat from a quarter to a half of a baked chicken. Mince fine one half small sweet onion. Warm eight corn tortillas in a large heavy skillet or microwave. Warm the contents of one jar of Larry’s Ranchero Sauce. Make the tacos by placing a portion of chicken on each taco, top with a sprinkling of fresh onion, spoon Larry’s Sauce over the contents and serve. Serves two to four.

Chipotle Chicken Enchiladas Recipe

Chipotle Chicken Enchiladas – Warm one jar of Larry’s Chipotle Sauce over medium heat. Dip eight fresh corn tortillas in the sauce to slightly soften. Shred meat from a roasted chicken, spread portions on the tortillas and sprinkle with cheddar or Monterey jack cheese. Roll the enchiladas and place them in a roasting pan. Ranchero Black Bean Chili Recipe

Brown three quarters pound of ground beef, turkey or pork, in a medium saucepan. Drain one 15-ounce can of black beans and add to the browned meat. Pour one jar of Larry’s Ranchero Sauce into the saucepan and cook over medium heat for 10 to 15 minutes. Serve with sour cream, grated cheese and tortilla chips. Serves two to four.

Southwestern Chicken Mole

Southwestern Chicken Mole – Warm one jar of Larry’s Southwestern Mole Sauce in a pan over medium heat. Place one pound of chicken thigh or breast meat in a roasting pan. Pour the Mole Sauce over the meat, cover and bake in the oven at 350’ for 35 minutes. Serve with rice or corn tortillas. Serves two to four.

Seafood in Ranchero Sauce

Seafood in Ranchero Sauce – Heat one jar of Larry’s Ranchero Sauce in a wide saucepan. Add one pound of peeled shrimp, scallops, tilapia or a combination. Cover and simmer over medium-low heat for ten to fifteen minutes, or until the seafood is cooked through. Serve with brown or white rice and a small wedge of fresh lime. Serves two to four.

Albondigas Meatball Sandwich Recipe

Albondigas is the Spanish word for meatballs. Think of these sandwiches as the Southwestern version on an Italian meatball sandwich, only better.

Place one pound of homemade or store-bought meatballs (about the size of a golf ball) in a large deep skillet or pan over medium heat and cook until heated through. Pour one jar of Larry's Ranchero, Chipotle or Mole Sauce over the meatballs. Cover and simmer on low heat for 15 minutes.

Slice open your favorite hard rolls or buns, place two or three meatballs in each, spoon more of Larry's Sauce over the meatballs and sprinkle with grated cheddar or Monterrey jack cheese.

Serves 2 to 4.

Huevos Rancheros Recipe

Heat one jar of Larry's Ranchero Sauce in a saucepan or microwave. Warm four to six fresh corn tortillas in a heavy skillet or griddle over medium heat for 15 to 20 seconds on each side. Fry two eggs per person. to serve, place two tortillas overlapping on a plate, top with the eggs, cover with warmed Ranchero Sauce and sprinkle with grated cheddar or Monterrey Jack cheese. Serves two to four.

Welcome to Larry's Southwestern Cookbook. I am the producer of Larry's Southwestern Sauces, a new line of Mexican and Southwestern-inspired cooking sauces; Ranchero, Chipotle and Mole. This blog will be filled with recipes to cook your favorite Southwestern dishes using Larry's Sauces. But it will also be filled with recipes that do not use Larry's Sauces.
