Albondigas Meatball Sandwich Recipe

Albondigas is the Spanish word for meatballs. Think of these sandwiches as the Southwestern version on an Italian meatball sandwich, only better.

Place one pound of homemade or store-bought meatballs (about the size of a golf ball) in a large deep skillet or pan over medium heat and cook until heated through. Pour one jar of Larry's Ranchero, Chipotle or Mole Sauce over the meatballs. Cover and simmer on low heat for 15 minutes.

Slice open your favorite hard rolls or buns, place two or three meatballs in each, spoon more of Larry's Sauce over the meatballs and sprinkle with grated cheddar or Monterrey jack cheese.

Serves 2 to 4.
