Chipotle Cheese Chilaquiles

Chilaquiles are quickly fried and then sauced corn tortillas that are a great snack food or a tasty antojito for a larger Mexican meal. It is all about the sauce for chilaquiles and Larry's Southwestern Chipotle Sauce with its slightly smoky flavor and chunkiness is perfect for this dish.

8 fresh corn tortillas
1 16 oz. jar Larry's Southwestern Chipotle Sauce
1/4 cup vegetable oil
1/2 cup minced sweet onion
1/2 cup queso fresco crumbled or grated Monterrey Jack, mild cheddar or colby cheese
1/2 cup Mexican crema made by mixing 1/2 cup sour cream with 3 T milk
1 avocado, sliced

1. Pour the jar of Larry's Chipotle Sauce into a 10" wide skillet or sauce pan. Heat until bubbling.
2. Heat the oil in a 10" wide skillet or sauce pan.
3. Place each tortilla in the oil for 15 to 20 seconds, turning a couple times, until the tortilla is just soft and pliable.
4. Drain and then dip the tortilla in the hot chipotle sauce, fold in half and place on a plate.
5. Prepare another tortilla in the same way and place two tortillas per plate. Continue until all tortillas are prepared and plated.
6. Sprinkle the onion and queso fresco over the chilaquiles and drizzle with the crema.
7. Add avocado slices to each plate and serve. Serves 4.
