Goat cheese, soft corn tortillas and Larry's Chipotle Sauce combined makes for some very tasty enchiladas, even for those people who are still acquiring a taste for goat cheese. The slightly smoky flavor of Larry's Chipotle Sauce really works well with this dish.
Heat one 16 oz. jar of Larry's Southwestern Chipotle Sauce. Warm 12 soft corn tortillas in the microwave for 15 seconds. Dip each tortilla in Larry's Chipotle Sauce, spread equal amounts of goat cheese on the tortillas, roll them up and place them in a baking pan.
Pour the remaining sauce over the rolled tortillas, sprinkle a cup of grated Monterrey jack on top and bake in a 350' oven for 20 minutes. Serves three to four people.

Albany Law School Chipotle Chili Recipe

Chipotle Beef Chili
Dredge one pound stewing beef in flour and brown in butter and olive oil in a medium cooking pot.
Add one 16 oz. jar of Larry's Southwestern Chipotle Sauce, one small sweet onion, chopped, one small can (16 oz.) of crushed tomatoes and simmer for two to three hours on low, stirring occasionally.
In the last hour add one 16 oz. can of dark red kidney beans.
Serve with shredded cheese and sour cream. Enjoy!
