Ranchero Breakfast Burritos

Breakfast burritos are popular in restaurants everywhere. With Larry's Ranchero Sauce , you can make your own all-natural breakfast burritos at home any day you want.
1 16 oz. jar Larry's Southwestern Ranchero Sauce
4 (10 inch) flour, whole wheat or gluten free tortillas
1 lb. chopped chorizo or pork breakfast sausage
4 eggs
1/4 pound grated mild cheddar cheese
  1. Warm the jar of Larry's Ranchero Sauce over medium heat.
  2. Warm the tortillas in a large skillet on low heat until soft and pliable.
  3. Brown the sausage in a skillet over medium heat until cooked through. Drain off any excess oil.
  4. Scramble the eggs.
  5. Make a breakfast burrito by laying a warm tortilla on a flat work surface. Spoon 1/4 cup Larry's Ranchero Sauce over the tortilla. Add 1/4 of the sausage, 1/4 of the scrambled eggs and 1/4 of the grated cheese on the tortilla.
  6. Fold the tortilla like an envelope and place it on a warm plate. Serve with a small dish filled with 1/4 cup Larry's Ranchero Sauce for dipping. Make the rest of the burritos and serve. 
  7. Serves four.

Guido's Demo This Weekend

Larry will offer samples of chipotle taquitos from 11 to 3 at Guido's Fresh Marketplace in Great Barrington, MA and from 4 to 6 at Guido's in Pittsfield, MA on Sat, Oct. 20. Guido's was the first store to stock Larry's Sauces and it is always a pleasure going back to visit. Come visit the Berkshires and say, hola!

Chipotle Chicken and Cheese Quesadillas

Quesadillas are grilled cheese-filled tortillas that are popular in the Southwest, in Mexico, and, well, everywhere. I like mine with Monterrey Jack cheese, a portion of shredded roast chicken and a good dollop of Larry's Chipotle Sauce for that smoky flavor. 

1 16 oz. jar Larry's Southwestern Chipotle Sauce 
1 cup grated Monterrey Jack or mild cheddar cheese
2 cups shredded roast chicken
8 eight-inch wheat, whole wheat or mixed grain tortillas
2 Tblsp. vegetable oil

  1. Warm the jar of Larry's Chipotle Sauce to medium hot.
  2. Place one tortilla on your work surface and cover with 1/4 cup cheese, 1/2 cup chicken and 1/4 cup Larry's Chipotle Sauce.
  3. Cover with another tortilla and press down lightly.
  4. Warm 1/2 tablespoon oil in a 12" or larger skillet over medium heat.
  5. Place one quasadilla in the pan and cook for three minutes. Flip the quesadilla and cook until the cheese melts.
  6. Remove the quesadilla to your work surface, cut into quarters and artfully place them on a serving plate.
  7. Spoon another quarter cup of warm Larry's Chipotle Sauce into a little serving cup or on the side of the plate. Make the rest of the quesadillas the same way and serve.
  8. Dip the quesadillas  in the sauce and enjoy.
Serves 4.
